Ingredients
- 3 tbsp dried thyme
- 2 tbsp dried rosemary
- 2 tbsp dried summer savory
- 1 tbsp dried oregano
- 1 tsp culinary lavender, optional
Method
- Crush the rosemary lightly.
- Combine all the dried herbs.
- Spoon into a clean, airtight jar.
- Label and store away from heat and light.

Season roast vegetables, potatoes, breads, tomato dishes and savoury marinades. You can also sprinkle it over roasted vegetables before baking for a classic herbes de Provence flavour. It is especially good in simple recipes where the herbs can shine.
Herbes de Provence Ingredients
This Provençal-style blend balances thyme, rosemary, summer savory and oregano. Culinary lavender adds a floral note but is optional. Some herbes de Provence mixes also include basil, parsley, chervil or sage, but this version keeps to the same herbs for a simple, well-rounded mixture of dried herbs. If you like, you can adjust the balance slightly and keep the proportions close to the classic rosemary, thyme, oregano base.
