Ingredients

  • 1 large handful fresh lemon balm
  • 1 small handful fresh mint leaves
  • 500 ml freshly boiled water
  • 2 lemon slices
  • Honey, optional

Method

  1. Bruise the fresh herbs gently to release their aroma.
  2. Place the mint leaves, lemon balm and lemon slices in a teapot.
  3. Pour over the freshly boiled water.
  4. Cover and let it steep for 5–8 minutes.
  5. Strain and serve in a warm cup, or chill and enjoy over ice.
