Mint & Elderflower Cordial Recipe

A fragrant seasonal cordial made with fresh elderflower heads, garden mint and lemon. This homemade elderflower cordial is easy to make and can be served with sparkling water or still water.

Ingredients

  • 20 fresh elderflower heads
  • 1 large bunch of mint
  • 1 kg granulated sugar
  • 1 litre water
  • 2 unwaxed lemons
  • 30 g citric acid

Method

  1. Gently shake the flower heads to remove insects and any debris. Do not wash the elderflower heads, as this can remove the pollen and flavour.
  2. Bring the sugar and water to a boil, then remove from the heat and leave to cool slightly.
  3. Add sliced lemon, mint, elderflowers and citric acid.
  4. Cover and infuse for 24 hours in a cool place.
  5. Strain through muslin or a tea towel and pour into sterilised glass bottles.
  6. Refrigerate in the fridge.

Ways to Enjoy It

Mix one part cordial with four to five parts chilled still or sparkling water. For a refreshing variation, serve over ice with extra mint and lemon.

Plant Notes

Elderflowers bring a light floral aroma while mint adds a clean, cooling finish. Use the freshest flower heads possible for the best flavour.

Important Information

Use correctly identified elderflowers and remove as much green stem as possible. Keep refrigerated and use within two weeks, or freeze.
