Ingredients

  • 150 g flaky sea salt
  • 3 tbsp finely chopped fresh rosemary
  • Zest of 1 unwaxed lemon

Method

  1. Combine the salt, rosemary and lemon zest in a bowl or food processor, if you want a finer finish.
  2. Spread the mixture evenly on a baking tray.
  3. Dry at 80°C for 45–60 minutes, stirring once halfway through if needed.
  4. Cool completely before transferring to a clean jar.

Ways to Enjoy It

Sprinkle lightly over roast vegetables, potatoes, focaccia, grilled dishes or simple salads for a savoury lift. It also makes a lovely finishing salt for chicken, fish, tomatoes or buttered bread.
