Strawberry & Lemon Balm Shrub

A bright strawberry vinegar drink made with strawberries and fragrant lemon balm. This easy drinking vinegar recipe makes a fruity shrub that can be diluted with sparkling water for a refreshing summer drink.

Ingredients

  • 300 g strawberries
  • 1 large handful lemon balm
  • 150 g granulated sugar
  • 250 ml apple cider vinegar
  • 1 strip unwaxed lemon peel

Method

  1. Slice the strawberries and combine with the sugar to draw out the fruit syrup.
  2. Cover and refrigerate for 12 hours.
  3. Add the lemon balm, apple cider vinegar and lemon peel.
  4. Infuse in the refrigerator for 24 hours.
  5. Strain and pour into a clean bottle.

Ways to Enjoy It

Mix one part shrub with four parts sparkling water, adjusting to taste. You can also serve it as a drinking vinegar topped with still water, soda water or a splash of tonic.
