Substitutions: Fennel and Lovage may be interchanged according to season and availability. Any other unavailable plant will be replaced with a carefully chosen culinary herb of similar garden value.

Culinary Uses

Use the collection across roasted dishes, soups, sauces, salads, marinades, breads and Mediterranean-style cooking. Parsley brings fresh leafy flavour, while Rosemary, Thyme, Marjoram and Oregano provide aromatic depth. Fennel or Lovage adds a distinctive savoury note.

Allowing some plants to flower provides nectar for bees and other beneficial insects. The varied foliage also adds fragrance and structure to a productive kitchen garden.

Planting

Plant into a sunny herb bed, raised bed or individual containers. Group Rosemary, Thyme, Marjoram and Oregano in the driest, sunniest area, while Parsley and Lovage or Fennel appreciate slightly more moisture.

Spacing: Allow enough room for each plant to mature and avoid crowding the larger Fennel or Lovage plant.

Care

Watering: Water regularly while establishing. Mediterranean herbs prefer the soil to dry slightly between watering, while Parsley and Lovage benefit from more consistent moisture.

Feeding: Use a light feed in spring and avoid overfeeding Rosemary, Thyme, Marjoram and Oregano.

Maintenance: Harvest regularly to encourage fresh growth and trim woody herbs lightly after flowering.

Harvesting & Storage

Harvesting: Pick leaves little and often once plants are established. Harvest in dry weather for the best aroma and flavour.

Storage: Use fresh, freeze chopped leafy herbs or dry Rosemary, Thyme, Marjoram and Oregano in a warm, airy place.

UK Growing Conditions

These herbs grow well in UK gardens when drainage is good. Protect tender young growth from late frost and shelter container-grown Mediterranean herbs during prolonged severe winter weather.
